Sapa shoulder-carried pig (lon cap nach — small highland black pig) is the meat dish many guests want after fish hotpot: firm, not flabby, good on the grill. At Binh Minh Restaurant (Vua Bep), 02 Pham Xuan Huan, Sa Pa, Lao Cai, ask what is in that day: grilled, mac khen stir-fry, or boiled with dipping salt. Two people: one plate plus rice and greens. Four: add a vegetable or a small hotpot. If it is sold out, switch to black chicken or sturgeon hotpot — do not push the kitchen.
